I’ve had a lovely week of home baking which I will share on my blog and I hope to enjoy some easy bakes during the Easter holidays. My favourite things to use as baking decorations this time of year are Chicky Chocky Eggs by Marks & Spencer. They are bright and colourful and make cakes and treats look very pretty. I love this easy tray bake recipe for birthday treats, weekend afternoons and for other special celebrations.

You will need

Party Rings~ the mini ones ideally

A packet of rich tea biscuits

2 medium bars of white chocolate

Mini mellows

Happy Baking!

Let’s get started…

Break the white chocolate into small chunks and melt in a heat proof dish over a low heat. Make sure that the bottom of the bowl is not touching the water as it melts the chocolate.

Roughly cut/snap approximately 8 rich tea biscuits into small chunks.

Snap the party rings into halves. Save some rings for the decoration at the end. yum.

Give the chocolate a stir and remove from the heat once it’s smooth.

Add the rich tea biscuits, halved party rings and mix until coated in chocolate. Add extra rich tea if preferred.

The last step is to pour in the mini mellows and gently mix.

Pour the mixture into a square based baking tin.

Pop in the fridge to chill for 1-2 hours.

*tip. Before cutting, allow the tray bake to reach room temperature. It will be easier to slice and bite into for little ones.

Baking with Cadbury’s~ Vanilla Chocolate Chip Muffins! 

…I’m happy to be sharing a recipe involving Twirls and Wispa’s. Baking with chocolate by Cadbury is always delicious and this recipe is really easy.

The process takes about 20 minutes and perfect for little ones to be hands on and involved all the way. Enjoy!

We chose to use Twirls and Wispa’s- our favourites but you could use other Cadbury variations- buttons work perfectly too. They make amazingly tasty muffins. You chose, have fun x

Ingredients:
10 oz plain flour

4 oz soft light brown sugar

2 eggs

3 oz butter

2 teaspoons of vanilla extract

Twirl & Wispa bites

1 tbsp baking powder

Create!

Pre heat the oven to 200 degrees {or gas mark 6}.

Measure the flour and sift into a big bowl. Add 1 tbsp baking powder

Beat the egg and measure the sugar ready to go.

Combine the sugar and butter and mix until soft.

Transfer into the flour bowl, adding the eggs gradually.

Pop the vanilla flavouring in. Gently combine all of your ingredients together.

Line a muffin tin with 12 muffin cases.

Scoop the mixture into the cases.

The yummy bit: carefully cut the chocolate pieces into chunks and decorate each case with yummy chunks of chocolate.

Bake for 20 minutes until golden brown.

Leave to cool on a wire rack before sharing x

…I love this Marc Jacobs quote and it’s such a true but simple thought to me and perfect words to live by. It is important to do the little things that make you happy and to do these things as much as possible.

Baking together is not about perfection every time, I know it takes the fun out of the process and requires over thinking… everything to do with the process of baking a treat should bring a little JOY to a day. I find baking therapeutic. I love sprinkling and decorating and especially baking on rainy afternoons. Simple things really. What simple joys make you feel HAPPY?
